Grandma's Zucchini Bread
INGREDIENTS

  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoon cinnamon
  • 3 eggs
  • 2 cups sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups grated zucchini
  • 1 can (8 ounces) drained pineapple
  • 3/4 cup chopped nuts
DIRECTIONS
  1. Cream together eggs, sugar, oil, and vanilla.
  2. Fold in mixture of flour, baking soda, salt, baking powder, and cinnamon.
  3. Then, add the zucchini, nuts, and pineapple.
  4. Bake at 350 degrees for 1 hour.
  5. Makes 2 loaves.

My grandma would always make this bread for me with zucchini straight from her garden. It is the best and I love making it for my kids.
