Grandmother Hamilton's Fruit Cocktail Cake

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 cups fruit cocktail with liquid
  • 2 cups flour
  • 2 tsp baking soda
  • 2 eggs
  • 1/2 cup coconut
  • 1/2 cup brown sugar
  • 3/4 cup butter
  • 1/2 cup evaporated milk
  • 1 stick margarine
  • 1 tsp vanilla
  • 1/2 cup coconut
DIRECTIONS
  1. Cake
  2. 1 Put shortening, sugar, flour, soda and eggs in bowl; mix.. Put in a floured pan 9x 13 pan
  3. 2 Add fruit cocktail and mix lightly.
  4. 3 Sprinkle coconut and brown sugar on top of doug and bake at 350 degrees. Cool and leave in pan.
  5. Icing
  6. 1 Boil sugar, milk, and butter for 1 minute. Add vanilla and coconut. Beat slightly and put on cake while warm
  7. Oven Temperature: 350°F
