Granny Apple Coffee Cake (Carolina Thyme)

- 1 c sugar
- 1 c chopped nuts
- 1/3 c brown sugar
- 1½ t cinnamon
- 1 c butter
- 1 c sugar
- 2 eggs
- 1 t vanilla
- 2 c flour
- 1 t baking soda
- 1 t baking powder
- ½ t salt
- 1 c sour cream
DIRECTIONS
- Combine 1c sugar, 1c chopped nuts, 1/3 c brown sugar and 1 ½ t cinnamon in small bowl and set aside.
- Beat 1c butter and 1c sugar until light and fluffy.
- Add 2 eggs, 1 at a time.
- Add 1t vanilla.
- Sift 2c flour, 1t baking soda, 1t baking powder, and ½ t salt.
- Add to creamed mixture, alternately with 1c sour cream.
- Fold in 2c chopped peeled apples.
- Pour half of batter into 9x13 pan, sprinkle with ½ of nut mixture.
- Top with remaining batter and nut mixture.
- Bake at 350 for 35-40 min.
