Granny Great's Rosy Rhubarb Compote

INGREDIENTS
  • 2 lbs. rhubarb
  • 1 1/2 cups sugar
  • Finely grated zest of 1 large orange
DIRECTIONS
  1. Heat oven to 375 degrees.
  2. Cut rhubarb into 1" pieces and place in an oven-proof dish.
  3. Mix sugar with zest and sprinkle over rhubarb and cover with foil.
  4. Bake 45-60 minutes.
RECIPE BACKSTORY
My children's great grandma gave me this recipe when I asked for recipes for rhubarb. I had grown a plant and wanted an easy recipe to use. I have not tried freezing yet. Great on ice cream or sweet bisquits.
