Granola

INGREDIENTS
  • 2 lbs. rolled oats
  • 2 c. shredded coconut
  • 2 c. nuts (almonds, chopped are preferred)
  • 2 c. wheat germ
  • 1 1/2 c. oil
  • 2/3 c. water
  • 3 Tbsps. vanilla
  • 1 1/2 c. honey
  • 3 c. raisins, chopped dried apricots, dates, or other similar dried fruit in any combination
DIRECTIONS
  1. Combine oats, coconut, nuts, and wheat germ in large container. Combine oil, water, vanilla, and honey in a separate bowl then mix with cereal mixture until well coated.
  2. Divide into two 9x13 in. pans. Bake at 250F for 1 1/2 hours, stirring every 15 min. When cool, add dried fruits and store in airtight container. Yields: 5 lbs.
