• 1 box Duncan Hines Devil's Food Cake Mix (made with applesauce and egg substitute) OR your fav. chocolate cupcake recipe
• 1 can of chocolate icing (I prefer the whipped kind) OR your fav. chocolate icing recipe
• mint extract
• mint cookies

1. Prep your cupcake mix as directed and add 1 tsp mint extract.
2. Crush 20+ cookies into crumbs.
3. Fill cupcake cups half full with mix, then spread a layer of crumbs, and then fill cupcake cups to top with mix.
4. Bake as directed. Once cooled, mix chocolate icing with 1 tsp. mint extract.
5. Ice cupcakes and place a half of a cookie on top.

I came up with this one yesterday in order to make cupcakes for my family's Easter lunch. It's quick and easy, so hopefully you will enjoy it!
