Grateful Gazpacho

INGREDIENTS
  • Servings: 12 10oz bowls

  • 2 28 oz cans diced tomatoes
  • 2 cups cucumbers, peel and seed
  • 1 1/2 cups fresh tomatoes, rough chop
  • 1 1/4 cups green peppers seed and rough chop
  • 1c Spanish onions, peel and rough chop
  • 2T fresh garlic, peeled and minced
  • 1T sugar
  • 2T Red Wine Vinegar
  • 2 6oz cans v8 juice
  • 6 oz tomato juice
  • 1 1/2c Bloody Mary Mix
  • 2t salt
  • 1/2T Tabasco sauce
  • 1/2T tarragon
DIRECTIONS
  1. Combine the chopped veggies and the garlic, and puree.
  2. add in remaining ingredients and blend together.
  3. serve in a bowl and garnish with more diced onion, cukes, peppers and tomatoes
  4. eat with crackers.
  5. Keep leftovers chilled
