Greek Salad with Avocado

  • 2 English cucumber
  • 1 1/2 pounds medium tomatoes
  • 1/4 small red onion
  • 1 1/2 cup Kalamata olives
  • 1/4 cup Italian flat parsley
  • 2 avocados
  • 1 cup fete cheese
  • 1/2 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 2 cloves garlic
  • 1 tablespoons oregano
  • 2 teaspoon sugar
  • 1 teaspoon each of kosher salt and freshly ground black pepper
DIRECTIONS
  1. 1. in a bowl serving combine the cucumber tomatoes red onion kalamata and parsley place the avocado in a small bowl
  2. 2. in canning jar combine the olive oil red wine garlic oregano sugar and salt and pepper top with lid and shake well until blanked and emulsified season with more sugar and salt and pepper to taste
  3. 3. pour 1 rablespoon of dressing on sliced avacodo and mix to coat pour the rest of the dressing on the cucumber mixture and toss to coat adds avocado to the salad and top with fete cheese
