Greek Savory Pie

  • 1/2 cup onions, sliced
  • 1 tsp minced garlic
  • 1 tbsp butter
  • 1 (10 oz.) pkg. frozen chopped spinach, drained and thawed
  • 1/2 cup cottage cheese
  • 1 cup evaporated milk
  • 1/2 cup baking mix
  • 3 eggs
  • 1 tsp lemon juice
  • 1/4 tsp pepper
  • 3 tbsp grated Parmesan cheese
  • 2 tbsp feta cheese
DIRECTIONS
  1. Grease a 9 inch pie pan. Cook and stir onions and garlic in butter in a skillet until onions are transparent. Stir in spinach. Layer spinach mixture and cottage cheese in pie plate. Beat milk, eggs, Bisquick and lemon juice and pepper until smooth. Pour over spinach/cottage cheese mixture. Sprinkle with feta cheese and Parmesan cheese. Bake 35-40 minutes at 350 degrees or until knife inserted comes out clean.
