Greek yogurt with red wine-infused dates, toasted walnuts & honey

  • 1/2 cup plain Greek yogurt
  • 1 packet Stevia sweetener
  • 1 tablespoon chopped walnuts
  • 1 cup red wine
  • 5 dried, pitted dates
  • 1 teaspoon honey
  1. Place the red wine and dates in a small saucepan. Bring to a boil, then simmer on medium-low until the dates are soft. Drain and set aside.
  2. In the meantime, toast the walnuts in a dry saute pan. Set aside when done.
  3. In a small bowl, thoroughly stir the Stevia packet into the Greek yogurt. Top with the dates and toasted walnuts, and drizzle the honey over top. And that’s all she wrote!
This simple dessert is healthy and exotic, and made in the perfect single-serving size. Make it for yourself, or make multiple single servings for a dinner party. You may already have the ingredients in your fridge and pantry, but never thought of combining them before. It doesn’t have to be dessert, either – it also makes a nice breakfast or mid-afternoon snack.
