Green Bean Salad

- 1 Medium potato, peeled
- 1/2 Pound fresh green beans cut in half
- 1 Medium tomato, diced
- 1/2 Small red onion, sliced and separated
- 2 Boiled eggs, cut in half
- 2 Tablespoons red wine vinegar
- 2 Tablespoons Canola oil
- 2 Tablespoons minced fresh oregano
- 2 Tablespoons minced fresh parsley
- 1/8 Teaspoon salt
DIRECTIONS
- Place potato in a saucepan and cover with water. Bring to a boil then reduce heat cover and simmer for 25 minutes or until tender. Drain and cool and then cut into cubes. Meanwhile, place green beans in a saucepan and cover with water. Bring to a boilÍž Reduce heat and cook uncovered, for 8-10 minutes or until crispy tender then drain and cool. In a large serving bowl, combine the beans, potato, tomato and onion. In a jar with a good fitting lid, combine the remaining ingredients and shake well. Pour over the bean mixture and toss to coat.
