Green Beans and Carrots
  • 1 pound fresh green beans diced
  • 2 carrots diced
  • water to cover green beans and carrots about 2 inches over
  • 1 large onion chopped
  • 3 garlic cloves minced
  • 1 bell pepper (any color)
  • 3 roma tomatoes diced
  • dash of olive oil
  • salt and pepper to taste
  1. Simmer green beans and carrots for 15 minutes after water boils.
  2. Sauté onions and garlic.
  3. Add bell pepper and tomatoes and sauté.
  4. Drain green beans carrots and mix all ingredients.
  5. Cook, mix and stir for 2 minutes. Add salt an pepper to taste.
