Green Chili Egg Casserole
INGREDIENTS
- 12 eggs tabasco 8 oz green chilies
- 16 oz small curd cottage cheese 1/4 c butter, melted
- 2 c shredded monterey jack 1/2 c flour
- 2 c shredded cheddar 1 t baking powder
DIRECTIONS
- Beat eggs and gradually add all other ingredients. Pour
- into greased 9" x 13" pan. Bake at 325* for 20-30 minutes.
- Serve with salsa. Serves 10-12.
- (I prefer to use whole green chilies, and chop them myself - I think the pre-chopped are too seedy)
