Green Split Pea Soup
INGREDIENTS
- 8 cups water
- 1 lb. green split pea
- 2 vegetable bouillon cubes
- 2 carrots sliced
- 2 celery stalks sliced
- 1 teaspoon fresh oregano chopped finely
- 1 onion chopped
- 5 garlic cloves minced
- dash of olive oil
- salt and pepper to taste
- parsley for garnish
DIRECTIONS
- In pot boil water with split pea and bouillons then simmer for 40 minutes.
- Add carrots, celery and oregano to pot.
- In pan saute onions and garlic with oil and add to pot and cook another 40 minutes or until peas are soft.
- Salt and pepper to taste.
