Green Stroganoff with pasta

  • - 100 ml dry white wine
  • - 200 grams of spinach leaves, chopped
  • - 1 onion, sliced
  • - 60 grams of blue cheese
  • - 200 grams of smoked bacon in small cubes or slivers
  • - 200 grams of pasta
  • - black pepper according to taste
  1. 1 Fry the bacon in a skillet until crispy with black pepper
  2. 2 Add the onion and fry for another two minutes
  3. 3 Pour in the wine and wilt the spinach in it
  4. 4 Melt the cheese in the mixture and softly reduce the liquid to approximately three tablespoons
  5. 5 Cook the pasta as usual
  6. 6 Mix the liquid and about a quarter of the content in the skillet through the pasta
  7. 7 Put the pasta on a plate, top with more spinach and bacon from the skillet and garnish with a few black olives and small cherry tomatoes.
  8. I used Roquefort, but any blue cheese will do. If you don't like the strong taste of blue cheese and like to have your spinach a little more creamier, you can either add a bit of cream with the wine or substitute blue cheese with mascarpone, ricotta or another cream cheese
