Grilled Balsamic Veggies
INGREDIENTS

  • 3/4 cup Italian salad dressing
  • 2 tbsp balsamic vinegar
  • 1 tbsp parsley
  • 1 tsp lemon-pepper seasoning
  • 1 1/2 tsp Cajun seasoning
  • 1 medium zucchini, cut into 1/4-inch slices
  • 1 medium yellow summer squash, cut into 1/4-inch slices
  • 1 small onion, quartered
  • 1/2 green bell pepper, cut into 1/4 inch strips
  • 1 large carrot, peeled & cut into 1/4-inch slices
  • 4 fresh mushrooms, cut in half
DIRECTIONS
  1. In a large baggie, combine the salad dressing, vinegar, parsley, lemon-pepper and Cajun seasoning. Add the vegetables; seal bag and turn to coat. Let maranate in frig for 1 hour; drain. Arrange vegetables on a grill rack.
  2. Grill, covered, over medium heat until tender, about 20 minutes, stirring frequently. Makes 4 servings.
