Grilled Chicken With Cilantro Butter
  • 4 chicken breasts with skin
  • 1 Tablespoon chopped garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons grated lime peel
  • 8 sprigs fresh cilantro
  • 1/4 cup chopped cilantro
  • 1/4 cup butter or margarine, melted
  • 2 Tablespoons olive oil
  • 2 Tablespoons fresh lime juice
  1. Combine garlic, ½ teaspoon salt, and ¼ teaspoon pepper in a small dish; mash into a paste using the back side of a large spoon.
  2. Add lime peel.
  3. Loosen the skin of the chicken by slipping your hand between the meat and the skin.
  4. Spread a quarter of the garlic mixture and tuck cilantro sprigs under the skin of each breast.
  5. Combine chopped cilantro, butter, oil, and lime juice in a small bowl.
  6. Brush chicken skin lightly with the mixture.
  7. Sprinkle with remaining ½ teaspoon salt and ¼ teaspoon pepper.
  8. Place chicken on grill, skin side down.
  9. Brush with cilantro-butter mixture.
  10. Cover and grill for 15 minutes.
  11. Turn chicken; brush with half of the remaining cilantro-butter.
  12. Cover and grill 10 minutes.
  13. Without turning, brush chicken with remaining cilantro-butter.
  14. Cover and grill 5 minutes or until done.
