Grilled Honey Lemon Chicken

  • 1 lb. chicken thighs and drumsticks
  • 1/2 c. lemon juice (2 lemons)
  • 1/4 c. olive oil
  • 1 clove minced garlic
  • 1 t. sea salt
  • 1/2 t. oregano
  • 1 T. honey
  1. Soak chicken in salted, cold water for about 30 minutes; pat dry. Preheat grill or oven to 500 F. with large iron skillet. Brush chicken with olive oil and place in skillet. Grill or broil 10-15 minutes per side until skin is crisp and chicken is done. Make the sauce by whisking the lemon juice, 1/4 c. olive oil, garlic, salt, and oregano together. Add a little of the sauce to the chicken in the skillet and cook a few more minutes until chicken is crispy and golden brown. When done, remove chicken from the skillet and set aside. Pour sauce and honey in skillet and cook until heated bubbly and hot. Pour sauce over chicken to serve.
