Grilled Kafta

  • 1 pound finely ground lean lamb
  • 1 small onion, minced
  • 1/2 cup finely chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cinnamon
DIRECTIONS
  1. Mix all ingredients well. Form meat into individual long cylinder shapes around a skewer. Broil in the oven or grill.
RECIPE BACKSTORY
A classic Middle Eastern dish, but you can of course make it your own. Add pine nuts, different or more spices, and make sure you dip it into a lot of labne.
