Grilled Pineapple Glazed Pork

  • 1 cup pineapple juice
  • 1/2 cup dark brown sugar
  • 4 garlic cloves -- crushed
  • 1 teaspoon ground ginger
  • 2 3/4 pound pork tenderloin
  • vegetable cooking spray
DIRECTIONS
  1. Preheat grill or broiler. Place pineapple juice, brown sugar, garlic, and ginger in a small pan. Stir and cook on high for 5 minutes or until sauce thickens to a syrup consistency. Remove fat from pork and cut the tenderloin nearly in half lengthwise so that it opens like a book. Do not cut all the way through. Spray all sides with cooking spray. Grill 3-4" from heat for 5 minutes. Turn and spoon half the glaze on the cooked side.
  2. Grill 5 more minutes or until a meat thermometer reads 160F. Remove from grill and spoon remaining glaze on unglazed side. Cut into slices and serve, spooning all of the juices over the slices.
