Grilled Tuna with Pineapple Salsa
  • Marinade
  • ½ cup olive oil
  • ¼ cup lemon juice
  • 4 scallions, chopped, including tops
  • Salsa
  • 1 small fresh pineapple, cut into small cubes
  • 1 small red onion, diced
  • 1 medium yellow or orange pepper, cored, seeded and
  • diced
  • 1 medium red pepper, cored, seeded and diced
  • ½ teaspoon finely minced jalapeno pepper
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  1. Combine the oil, lemon juice, and scallions. Pour
  2. over the tuna steaks in a flat pan and marinate for
  3. several hours before grilling tuna. Meanwhile,
  4. prepare pineapple salsa by combining all the salsa
  5. ingredients. Set aside. When ready to cook, place
  6. the tuna steaks directly on a hot oiled grill. Cook
  7. for 3-4 minutes on each side, turning once. Do not
  8. overcook. Serve with salsa on top or passed in a
  9. bowl.
I am not a fan of fish, but I am trying really hard to incorporate into our dinners at least once a week. So, here is what I made last night and we all really enjoyed it:)
