Gruyere Spinach Gratin
  • 1 Tbs olive oil
  • 1 sm yellow onion diced
  • 1 clove garlic minced
  • 2 boxes frozen chopped spinach, thawed
  • 4 oz cream cheese
  • nutmeg, 1 teaspoon
  • salt and pepper
  • Gruyere cheese, grated
  • Bread crumbs(optional)
  1. In a skillet over med heat cook onion and garlic until translucent, add nutmeg and a little salt and pepper. Squeeze out spinach to remove extra water and add to onion mixture. Cook for a while till spinach dries out a bit. Add cream cheese and take off heat and mix to combine. Put mixture in a greased, gratin dish (I sometimes do individual ones in ramekins). In bowl mix gruyere cheese with bread crumbs; once combined sprinkle on top of spinach mixture. Cook in a 350 for about 20 min until cheese is melted and bubbly.
