Guatemalan Banana Bread Golden Baked French Toast

  • 1 whole wheat English muffin, split, toasted
  • 2 slices ripe tomato
  • 8 ounces spinach, cooked
  • 2 hard-boiled eggs, sliced
  • 2 tablespoons mayonnaise
  • Salt free seasoning, sprinkle
  • 2 basil leaves, shredded
DIRECTIONS
  1. Preheat oven to 350° F. In a large bowl, combine flour, baking powder & salt. Stir in bananas, coconut milk, vanilla & butter. Fold in raisins & cashews, if desired. Pour into a greased 5" x 9" loaf pan. Bake at 350° F for 1 hour & 15 minutes or until tested done.
  2. Layer bread in the bottom of a greased 13" x 9” baking pan; set aside. Combine milk, cream cheese, eggs, cinnamon, nutmeg, and orange extract in a blender; blend well. Pour evenly over bread; cover with aluminum foil and refrigerate overnight.
