Guinness Stew
  • 1 1/2 lb. Stew beef or lamb
  • Flour for dredging
  • 4-5 New potatoes, halved
  • 1 medium onion, cut into large pieces
  • 2-3 carrots, peeled and chopped
  • 1-2 slices of bacon
  • 2 bottles Guinness
  • 2 sprigs rosemary
  • salt & pepper to taste
  1. Preheat oven to 350 degrees.
  2. Over medium heat, cook the bacon in a large dutch oven. You can either remove it from the pan, leaving the fat to cook with, or chop it up and leave it in. Dredge the meat in flour, then brown on all sides. Add the vegetables, Rosemary, and 1 bottle of Guinness to the pot. Transfer to oven and cook for 1 hour, stirring occasionally. Add the second bottle and cook for another 30 minutes or until the meat is falling apart.
I was making beef stew and had forgotten to buy stock, so I substituted Guinness instead. It turned out great and I've been using it ever since. The cooking time is approximate, I just check the meat as I go along.
