HEARTY STUFFED ARTICHOKES, BAKED
INGREDIENTS
  • 6 medium or large artichokes
  • 1/2 lb. ground lean beef
  • 1/2 c. chopped onion
  • oil
  • 2 Tbsp. chopped parsley
  • 3/4 c. soft bread crumbs
  • 1 egg
  • salt and dash of pepper
  • 1 tomato
  • 2 Tbsp. lemon juice
DIRECTIONS
  1. HEARTY STUFFED ARTICHOKES, BAKED
  2. 6 medium or large artichokes
  3. 1/2 lb. ground lean beef
  4. 1/2 c. chopped onion
  5. oil
  6. 2 Tbsp. chopped parsley
  7. 3/4 c. soft bread crumbs
  8. 1 egg
  9. salt and dash of pepper
  10. 1 tomato
  11. 2 Tbsp. lemon juice
  12. Wash artichokes, trim stems, pull off tough outer
  13. leaves. Cut off top third and spread artichokes open by
  14. placing upside down on table and pressing stem ends firmly.
  15. With teaspoon, dig out center leaves and fuzzy portions. Brown
  16. beef and onion in about 2 tablespoons olive or other cooking
  17. oil. Remove from heat. Stir in parsley and allspice. Fill
  18. centers of artichokes with meat mixture. Place artichokes in
  19. deep baking dish; top each with thin slice of tomato. Put
  20. 1-inch boiling water in pan; add lemon juice. Stand artichokes
  21. in pan. Top generously with salt and oil. Cover closely.
  22. Bake in moderate oven (350 degrees) about 1 to 1 1/2 hours or until
  23. tender. Serves 6.
