- Sugar 2# 4 oz.
- Cake Flour, sift 1# 8 oz.
- Cocoa, breakfast 8 oz.
- Baking Powder ½ oz.
- Baking Soda ½ oz.
- Salt ¼ oz.
- Corn Syrup 5 oz.
- Milk 1# 2 oz.
- Eggs, 80-90’F 1# 8 oz.
- Vanilla 1 oz.
- Butter, 80-85’F 1# 8 oz.
DIRECTIONS
- 5. Prepare the pans with a light coat of fat and a parchment circle on the bottom.
- 6. Combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
- 7. Combine the milk, eggs, corn syrup, and vanilla.
- 8. Blend the butter with the dry ingredients and ½ of the milk mixture and mix on medium speed with the paddle attachment for 4 minutes. Scrape the bowl and the paddle.
- 9. Add the remaining milk mixture in three additions, mixing for 2 minutes after each addition.
