  • Cake Flour, sift 1# 8 oz.
  • Cocoa, breakfast 8 oz.
  • Baking Powder ½ oz.
  • Baking Soda ½ oz.
  • Salt ¼ oz.
  • Corn Syrup 5 oz.
  • Milk 1# 2 oz.
  • Eggs, 80-90’F 1# 8 oz.
  • Vanilla 1 oz.
  • Butter, 80-85’F 1# 8 oz.
DIRECTIONS
  1. 5. Prepare the pans with a light coat of fat and a parchment circle on the bottom.
  2. 6. Combine the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
  3. 7. Combine the milk, eggs, corn syrup, and vanilla.
  4. 8. Blend the butter with the dry ingredients and ½ of the milk mixture and mix on medium speed with the paddle attachment for 4 minutes. Scrape the bowl and the paddle.
  5. 9. Add the remaining milk mixture in three additions, mixing for 2 minutes after each addition.
