Ham and Rice Casserole
  • 1 pound Ham, cubed
  • 1 cup green peppers, chopped
  • 1 cup onion, chopped
  • 1 cup celery, chopped
  • 1 can Chicken Broth
  • 1/2 cup uncooked rice
  • 1/4 teaspoon salt
  • 1 tablespoon butter, melted
  1. In a skillet,lightly brown ham; add chopped vegetables and saute until tender. Cover and set aside.
  2. In saucepan bring chicken broth to a boil and add rice, reduce heat and cover and simmer for 20 minutes. Add to ham and veggie mixture along with salt. Pour into a greased baking dish, drizzle with melted butter. Bake uncovered at 350* for 25 to 20 minutes.
I don't know about you, but I'm always trying to find ways to use up Leftover ham from the hoilidays. I put this all together and to my surprise we all liked it. It's been added to my T and T list. Hope you enjoy it too.
