Hamburger Minestrone Soup

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 can tomatoes, whole or diced - 28 ounces, undrained
  • 1 cup copped cabbage
  • 1 cup cubed potatoes
  • 1 cup sliced raw carrots
  • 3/4 cup sliced celery
  • 1/4 cup chopped green pepper
  • 4 cups beef broth
  • 2 cups water
  • 1/4 cup uncooked rice
  • 2 bay laves
  • 1/2 tsp thyme
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 4 tsp salt
  • 1/4 tsp pepper
DIRECTIONS
  1. In a large kettle, saute ground beef and onions until meat is browned; drain fat.
  2. Add tomatoes, cabbage, potatoes, carrots, celery, and green pepper. Bring to a boil.
  3. Add broth, water, rice, and seasonings.
  4. Cover and simmer for 1 hour.
  5. Serve sprinkled with grated Parmesan cheese.
  6. Note: I prefer to put the carrots in a mini food processor and chop them pretty finely, so they are little carrot chips.
