Harvest Cake

INGREDIENTS
  • Crust:
  • 1 pkg yellow cake mix (- 1 cup)
  • 1/2 cup butter or margarine, melted
  • 1 egg, beaten
  • Topping:
  • 1 cup reserved cake mix
  • 1/3 cup brown sugar, packed
  • 1 tsp cinnamon
  • 1/4 cup quick oats
  • 1/4c cold butter or marge
  • 1/4 cup pecan chips
  • Filling:
  • 2 eggs, beaten
  • 2/3 cup Carnation evaporated milk
  • 1 (15 oz) can Libby's pumpkin
  • 3/4 cup sugar
  • 4 oz cream cheese, softened
  • 1t cinnamon
  • 1/4 tsp each - cloves & nutmeg
  • 1t vanilla extract
  • 1/2 tsp salt
DIRECTIONS
  1. Grease bottom only of 9x13 pan.
  2. Add melted butter and egg to cake mix.
  3. Press firmly into pan.
  4. Beat filling ingredients in a deep bowl.
  5. Pour over crust.
  6. Mix dry topping ingredients, then cut in butter.
  7. Add nuts and sprinkle over filling.
  8. Bake 50-60 minutes @ 350*, until filling is set.
