Harvest Cake

INGREDIENTS
- Crust:
- 1 pkg yellow cake mix (- 1 cup)
- 1/2 cup butter or margarine, melted
- 1 egg, beaten
- Topping:
- 1 cup reserved cake mix
- 1/3 cup brown sugar, packed
- 1 tsp cinnamon
- 1/4 cup quick oats
- 1/4c cold butter or marge
- 1/4 cup pecan chips
- Filling:
- 2 eggs, beaten
- 2/3 cup Carnation evaporated milk
- 1 (15 oz) can Libby's pumpkin
- 3/4 cup sugar
- 4 oz cream cheese, softened
- 1t cinnamon
- 1/4 tsp each - cloves & nutmeg
- 1t vanilla extract
- 1/2 tsp salt
DIRECTIONS
- Grease bottom only of 9x13 pan.
- Add melted butter and egg to cake mix.
- Press firmly into pan.
- Beat filling ingredients in a deep bowl.
- Pour over crust.
- Mix dry topping ingredients, then cut in butter.
- Add nuts and sprinkle over filling.
- Bake 50-60 minutes @ 350*, until filling is set.
