Hashbrown Casserole

  • 1 stick melted butter
  • 2 lbs. frozen shredded hashbrowns, thawed
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 can cream of chicken soup
  • 1 pt. sour cream
  • 1/2 c. chopped onions
  • 10 oz. pkg. shredded cheddar cheese
  • Topping
  • 3 T. melted butter
  • 1 sleeve Ritz crackers, crushed
DIRECTIONS
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients (minus topping).
  3. Place in a 9x13 baking dish.
  4. Mix topping and sprinkle on top of potatoes.
  5. Bake 1 to 1 1/2 hours.
RECIPE BACKSTORY
Growing up, we would get together on Christmas Eve at my Aunt Barbara's house. As we got older, we naturally began to multiply by marriage. My cousin Bob, married and sweet girl named Dyan. She brought this casserole and now I make it every holiday.
