Hawaiian Sweet Potato Pudding
INGREDIENTS

- 4 medium sweet potatoes (use organic for a sweeter taste)
- 1 cup orange juice
- canned sliced pineapple (unsweetened), drained well
- 1 tablespoon date sugar (optional)
DIRECTIONS
- Preheat oven to 400 degrees.
- Prick sweet potatoes with a fork. Bake for 1 hour or until soft. Let cool and peel off skin.
- Mash sweet potatoes in a food processor or high powered blender with orange juice and date sugar, if desired.
- Spread mixture into a 9X9 inch glass baking dish. Cover with pineapple slices.
- Bake at 350 degrees for 1/2 hour. Serves 4.
