Health Kick Brownies

INGREDIENTS
  • 2 cups drained, canned Black Beans
  • 1⁄4 cup cocoa powder
  • 4 large eggs
  • 1 tbsp Vanilla
  • 2 tbsp fresh Ground coffee
  • 1⁄4 tsp Melted Coconut Oil or Butter
  • 1⁄2 cup Agave nectar, Honey or maple syrup
  • 1/2 cup Dark chocolate or chocolate chips
  • 1/2 cup Walnut if desired
DIRECTIONS
  1. mix all ingredients except nuts and chocolate with beaters or in a food processor
  2. Add nuts/chocolate chips, and pour the batter into a 9x13 or 8x8 pan.
  3. Bake at 350 degrees for 35-45 minutes.
  4. Let the brownies cool and set before eating.
RECIPE BACKSTORY
No way, a healthy brownie? That actually tastes good? Yup, folks, that's right. Be prepared to be amazed. When I first baked these, I set them out on the counter, chuckling to myself and pondering whether or not they would even be edible. After a quick walk with the dogs, I came back to ONE BROWNIE left. Mike, Julia and Melissa ate them ALL!! So kind of them to leave one for.... the dogs:)
