Healthier No-Bakes cookies (Using Aldi's ingredients)
INGREDIENTS
  • 2 pkgs Slivered Almonds
  • 1 TBS sunflower kernels unsalted
  • 1 TBS pepitas
  • 1 TBS chia seeds
  • 1 TBS flax seeds
  • sweetened coconut flakes
  • 1 bag dried strawberries
  • 1 Cup + extra needed quick cooking oats (depends on total mix of other ingredients. keep adding extra as needed to thicken)
  • 3-6 oz any 2 or more of the following dried fruits: cranberries, dates, figs, apricots, mixed berry, Mango, golden raisins, blueberries, pineapple, papaya, cherries
  • 1 stick Salted Butter
  • Almond milk start
  • 70- 85% Moser Roth Chocolate bars (I think I used 3 I don't remember lol)
  • OPT: Swiss miss hot cocoa pkt
  • 1 tsp vanilla
  • light blue agave (2nd lowest on glycemic index)
  • 1/4- 2/3 Cup smooth peanut butter
DIRECTIONS
  1. Add Almonds, pepitas, chia seeds, flax seeds, sunflower kernels, dried strawberries and coconut in food processor and chop to tiny pieces (I like powder better) then dump in a bowl to add later
  2. Add dried fruits to a processor and chop up a bit add to dry ingredients in bowl and save for later
  3. In microwave safe bowl (I uses Pyrex) Start w/ 1/2 to 3/4 Cup Almond milk add chopped up butter nuke 10 secs at a time stirring after each time after butters all melted add chopped up chocolate and nuke at 10 second intervals again 'till all melted. Take out of microwave and Add Vanilla then add agave to taste (I didn't measure but I'd say I started w/ about 2 TBS and added more) When its sweet enough for your families likes add peanut butter to taste.. can nuke at 10 second intervals if its not melted anymore. Then take out of microwave and add contents of the other bowl to the melted bowl and stir then add quick cooking oats until thick drop about 2 TBS onto wax paper for each cookie and let cool

Was reading about health benefits of certain ingredients and decided to make a concoction using the stuff I seen at Aldi's to add to my favorite cookie!
