Healthy Taquitos

- 2 cups. Cooked and Shredded meat of your choice.
- 2 1/2 oz. Cream Cheese (low-fat)
- 1/4 cup. Plain Greek Yogurt
- 1/3 cup. Salsa or Pico De Gallo
- 1/2 tsp. Cumin
- 1 tsp. Chili Powder
- 1 tsp. Garlic Powder
- 1/4 tsp. Sea Salt
- 1 tbsp. Green Onion, chopped
- 2 tbsp. Cilantro, chopped
- 1 tbsp. Lime Juice
- 1 cup. Shredded Cheese
- 8-10 Wheat tortillas
DIRECTIONS
- Pre-Heat oven to 425.
- Line a baking sheet with tin foil, and spray the tin foil with non-stick cooking spray.
- Soften the cream cheese by putting in the microwave for 30 seconds.
- In a bowl, combine the cream cheese, greek yogurt, salsa, cumin, chili powder and garlic powder, salt, and lime juice.
- Add in the meat you are using, cheese, green onions, and cilantro.
- Stir together.
- Lay out your tortilla and spoon about 3 tbsp of the mixture into the middle.
- Roll it up and place seam side down onto the baking sheet.
- Repeat for each tortilla.
- Bake for 15-20 mins.
