INGREDIENTS

  • 2 mashed ripe bananas,
  • 2 large eggs,
  • 6 Tbsp Maple Syrup
  • 1/2 Cup Oikos Vanilla flavored Triple Zero Greek Yogurt,
  • 3/4 Cup quick oats (can put in food processor if desired
  • 1 teaspoon baking soda,
  • 1/2 teaspoon Cinnamon,
  • 1 tsp vanilla,
  • 1 1/4 Cup flour,
  • Optional add-ins:, 1/2 Cup nuts or chocolate chips.
DIRECTIONS
  1. Preheat oven to 350 and grease a 9x5 in lo.af pan. Combine bananas ,eggs, syrup, greek yogurt and vanilla in a bowl. Add oats, baking soda, cinnamon and combine. Spoon in flour about 1/4 at a time until just combined. Fold in any add-ins. Pour into prepared loaf pan and sprinkle the top with sugar. Bake for 35-40 minutes and enjoy!
