Heartland Vegtable Bake
  • 3 medium red potatoes, chopped
  • ( about 3 cups)
  • 2 Tbs water
  • 16-oz package of frozen broccoli, cauliflower and carrot medley
  • 3 Tbs butter divided
  • 2 Tbs flour
  • 12-oz can of evaporated milk
  • 2 chicken flavored boullion cubes
  • pinch of white pepper
  • 1/4 cup seasoned breadcrumbs
  1. Microwave the potatoes in the water, cover with plastic wrap first. Cook for about 9 minutes, drain. Place back into the dish and add the vegtable medley.
  2. Melt 2 Tbs butter over medium heat and add the flour. Cook for about 30 seconds. Gradually add the evaporated milk, boullion and pepper. Stir well until the boullion dissolves and the sauce is slightly thickened. Pour over the vegtables. Microwave the remining butter for about 10 seconds and add the breadrumbs.Sprinkle over the casserole. Bake covered for about 30 minutes, uncover and bake for another 10 minutes or until the top is slightly browned.~
