Hearty Barbecue Skillet Dinner

  • 2 lbs red potatoes
  • 2 medium onions, chopped (frozen work great)
  • 1 beef bouillon cube dissolved in 1 cup water - low sodium!
  • 15 oz. can tomato sauce (I used Hunt's No-Salt version)
  • 1/2 cup packed dark brown sugar (you might use less. I thought it tasted really sweet)
  • 14 oz. low-fat smoked sausage, chopped into bite-size pieces (Healthy Choice had a great version)
  • Your favorite BBQ sauce
DIRECTIONS
  1. Poke potatoes with fork numerous times and microwave them on high until cooked (about 10 minutes). They will be soft to the touch when fully cooked.
  2. In skillet, cook chopped onions, dissolved beef bouillon, tomato sauce, brown sugar and sausage over medium heat, stirring occasionally.
  3. (After tasting the sauce, I recommend adding .5 to 1 cup of your fav. bbq sauce to spice things up).
  4. Cut the cooked potatoes into bite-size pieces. Stir into pan with everything else, covering everything with sauce.
  5. When onions tender and meal fully heated, serve.
