Heath Bar Brownies

INGREDIENTS
  • Caramel Sauce:
  • 1 1/3 cups whipping cream
  • 1 cup sugar
  • 3 tablespoons water
  • 2 tablespoons (1/4 stick) unsalted butter,
  • cut into 4 pieces
DIRECTIONS
  1. For Caramel sauce:
  2. Bring whipping cream to simmer in small heavy
  3. saucepan.
  4. Set aside.
  5. Combine sugar and 3 tablespoons water in heavy medium saucepan.
  6. Stir over medium heat until sugar dissolves.
  7. Increase heat to high and boil without
  8. stirring until caramel is deep amber color,
  9. brushing down sides of pan with wet pastry
  10. brush if suagr crystals form and occasionally
  11. swirling pan, about 8 minutes.
  12. Remove from heat and slowly add warm whipping
  13. cream (mixture will bubble vigorously)
  14. Return sauce to low heat and stir until
  15. smooth.
  16. Remove from heat and mix in butter.
  17. (Can be prepared 3 days ahead. Cover and
  18. refrigerate)
