Herb Roasted Butternut Squash
  • Cooking Time: 45 minutes to 1hr.
  • Servings: 4-6
  • Preparation Time: 10 minutes
  • 20 oz or 1 large butternut squash cubed
  • 2 tbs of coconut oil
  • 2 tbs garlic powder
  • 1 tbs salt
  • 1 tbsp ground pepper
  • 1 tbsp thyme
  • 1tbs onion powder
  • 3-4 slices turkey bacon chopped
  • Dash of salt
  1. Peel and cube the butternut squash (you can buy it cubed but always use fresh butternut squash not frozen)
  2. Next melt the coconut oil and coat the butternut squash
  3. Add all seasoning plus chopped bacon and mix
  4. Bake at 350 degrees until nice color brown
Ever since my surgery my activity level has decreased which led me to eating a healthier less restricted diet. One of the things about butternut squash is it tastes like sweet potatoes with less carbs. My husband goes crazy over this side dish.
