Herbed Shrimp Dip
INGREDIENTS
- 1 lb uncooked large shrimp, unpeeled
- 2 green onions, coarsely chopped
- 2 TBSP chopped fresh tarragon
- 1 cup mayonnaise
- 1 shallot, chopped
- 1 cup sour cream
- ½ tsp hot pepper sauce
- ½ tsp Worcestershire sauce
DIRECTIONS
- Bring medium saucepan of lightly salted water to boil. Add shrimp and cook just until bright pink, about 3 minutes. Drain; rinse under cold water.
- Peel and devain shrimp; transfer to food processor.
- Add green onions, shallot, and tarragon; using on/off turns, process until shrimp are finely chopped.
- Transfer shrimp mixture to medium bowl. Mix in mayonnaise and sour cream, Worcestershire sauce and hot sauce. Season to taste with salt and pepper. Cover and chill at least 2 hours
- This may also be made 1 day ahead. It is great served with chips or crudités.
