Herbed Zucchini
INGREDIENTS
- Cooking Time: 6 to 8
- 5 bacon strips diced
- 1 c. celery
- 1 c. onion
- 1 garlic clove
- 1 c. diced tomatoes
- 4 to 5 c. sliced zucchini
- 1 T. fresh parsley
- 1 1/2 tsp. fresh sage
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1/4 tsp. pepper
- 2 T. parmesan cheese
- 1/3 c. shredded mozzarella cheese
DIRECTIONS
- 5 bacon strips diced
- 1 c. celery
- 1 c. onion
- 1 garlic clove

- 4 to 5 c. sliced zucchini
- 1 T. fresh parsley
- 1 1/2 tsp. fresh sage
- 1/2 tsp. basil
- 1/2 tsp. oregano
- 1/4 tsp. pepper
- 2 T. parmesan cheese
- 1/3 c. shredder mozzarella cheese
- Cook bacon until crisp. Remove bacon. In 1 T. bacon fat saute onion, celery & garlic until tender. Add rest of vegetables and seasonings. Bring to boil reduce heat; cover and simmer 6-8 min. till zucchini is tender. Sprinkle with cheeses & bacon. Melt & serve.
