Holiday Cornflake Holly Cookies

  • Cooking Time: approx. 5-8 minutes
  • Servings: approx. 3 dozen
  • Preparation Time: approx. 20 minutes
  • 2 sticks Butter
  • 48 Large marshmallows
  • 1 t. Vanilla
  • Green Food Coloring
  • 8 cups Cornflakes
  • Red Hots
DIRECTIONS
  1. Melt butter in saucepan being careful not to burn.
  2. Add marshmallows and heat until melted stirring constantly.
  3. Add vanilla and green food coloring (enough for desired depth of color).
  4. Note: Be careful as mixture will splatter when above 2 ingredients are added. I add the color a little darker then the final color I want as it will lighten when you add the cornflakes.
  5. Add cornflakes and stir till coated nicely.
  6. Spoon mixture onto Reynolds Parchment Paper. Careful it will be hot!
  7. Drop a few Red Hots on each Cookie.
  8. Note: You need to work fast after removing from the heat as mixture will begin to set and you want the Red Hots to stick. This is where the younger kids can help drop the candies while you spoon out the mixture.
  9. Let cookies cool.

RECIPE BACKSTORY
The first time I made these cookies was in the 4th grade. I remember being invited over to a schoolmates home to make cookies. Her mother had all of the ingredients out and helped us prepare the cookies. We had so much fun laughing and eating our goods! I grew up with my father and brother so a baking day with Mom (even if it wasn't my Mom) was a real treat. I have been making these cookies without fail every year for the past 36 years! They are always devoured by both young and old. My son has been helping me make them (putting the red hots on top) since he was 2 yrs old. He requests them at various other times throughout the year. We vary the color and give them fun names for the season. Sometimes we press them into cookie molds to give them fun shapes before we lay them out on the parchment paper.
