Holiday Merigue Cookies
INGREDIENTS
- 2 Egg Whites
- 1/8 t. Salt
- 1/8 t. Cream of Tartar
- 3/4 c. Sugar
- 1/2 t. Vanilla
- 1 c. Mini Semi-Sweet Chocolate chips
- 1 c. Pecans, chopped
- 4 T. Crushed Candy Canes
DIRECTIONS
- Beat egg whites until foamy, add salt and cream of tartar. Beat until soft peaks form.
- Add sugar 1 tablespoon at a time, beating well after each addition.
- Meringue should be stiff and shiny.
- Fold in vanilla , chips and nuts.
- Drop by teaspoon on lightly greased cookie sheet (I use parchment paper), leaving 1 1/2 inches between cookies.
- Sprinkle with crushed peppermint candy.
- Bake at 250° for 40 minutes.
- Store airtight. Makes 5 dozen.
- Note: Best if not made on humid days.
