Holiday Merigue Cookies

INGREDIENTS
  • 2 Egg Whites
  • 1/8 t. Salt
  • 1/8 t. Cream of Tartar
  • 3/4 c. Sugar
  • 1/2 t. Vanilla
  • 1 c. Mini Semi-Sweet Chocolate chips
  • 1 c. Pecans, chopped
  • 4 T. Crushed Candy Canes
DIRECTIONS
  1. Beat egg whites until foamy, add salt and cream of tartar. Beat until soft peaks form.
  2. Add sugar 1 tablespoon at a time, beating well after each addition.
  3. Meringue should be stiff and shiny.
  4. Fold in vanilla , chips and nuts.
  5. Drop by teaspoon on lightly greased cookie sheet (I use parchment paper), leaving 1 1/2 inches between cookies.
  6. Sprinkle with crushed peppermint candy.
  7. Bake at 250° for 40 minutes.
  8. Store airtight. Makes 5 dozen.
  9. Note: Best if not made on humid days.
