Homeage to the Glory Bowl

  • 3 TBSP Soy Sauce
  • 3 TBSP cider vinegar
  • 3 TBSP water
  • 1 TBSP maple syrup (start with 1, add more if you like)
  • 1.5 TBSP size of fresh ginger (skin peeled but just throw the whole thing in)
  • 1-2 cloves of fresh garlic (whole- throw em in!)
  • 1.5 TBSP tahini (sesame seed paste)
  • 1/3 cup nutritional yeast
  • 1/3 cup olive oil
  • The Bowl
  • 4 cups cooked brown rice
  • 1 cup beets, grated
  • 1 cup carrots, grated
  • 1 cup almonds, toasted
  • Chopped mint or cilantro
  • 2 cups spinach leaves
  • 1 package firm tofu cut into 1/2-inch cubes
  • Feta cheese
  • Peaches if you have them!
  1. Prepare rice and set aside.
  2. To prepare dressing combine all ingredients in a blender. Add oil in a steady stream. Optional: place tofu cubes in a shallow dish and pour 1/4 of the dressing over to marinade while preparing the vegetables.
  3. Sauté tofu cubes in a skillet on medium heat with the dressing (for about 5 minutes).
  4. To assemble the bowls, place cooked brown rice into 4 bowls, top with beets, carrots, spinach leaves, almonds, and sautéed tofu cubes.
  5. Drizzle bowls with the dressing.
This is my all time favorite dressing- and meal! A Whitewater Cookbook all time favorite (if you do not own a copy of Whitewater cooks, you MUST get it). I've played around with the ingredients to suit my love of ginger. Make a double quantity of salad, and dress only what you will eat, as I guarantee you will want more the next day!
