Homemade Chicken Soup
  • 3 large chicken breasts with skin and bones
  • 2 carrots, peeled and sliced
  • 1 sm. onion, sliced
  • 2 stalks of celery, including leaves, chopped
  • 2-3 qts of water
  • 1 lg tsp. chicken base
  • 4 whole allspice
  • 2 bay leaves
  • Salt and pepper to taste
  1. Cook chicken in water until it falls off the bones. Remove chicken and cool enough to handle. Strain chicken broth into another pot.
  2. Remove chicken from bone and add to broth. Add onion, celery, spices and chicken base. Simmer for approximately 2 hours and serve over cooked egg noodles.
  3. Suggestion: Don't cook noodles in the soup because they will get mushy. I use Kluski noodles and they help make this the best tasting soup ever. And by the way, the allspice is the secret ingredient to making this taste so great.
