Homemade Ricotta

  • 4 Cups organic whole milk
  • 1 Cup heavy cream
  • 3/4 Cup buttermilk
  • 1/2 Teaspoon salt
  1. Place a cooking towel in a fine colander in a large bowl. Bring all ingredients to a slow boil in a sauce pan. Using a cooking thermometer, allow milk to reach 190 degrees F. Curds will form. Remove from heat and pour slowly through towel. Drain 15 minutes. The longer the curds drain, the firmer the cheese.
