Honey Currant Vinegar

  • Servings: 2 qt
  • 6 c. red currants, coarsely chopped
  • 1/4 cup sugar
  • 1/4 c. balsamic vinegar
  • 5 Tbsp. honey
  • 5 c. white wine vinegar
DIRECTIONS
  1. Combine currants and sugar in 2 quart jars. Let sit 1 day, stirring often. Strain into noncorrosive saucepan extracting as much juice from currants as possible. Add honey and vinegars. Bring to boil. Simmer 3 min.
  2. Cool completely. Pour into sterilized jars. Cover or cork. Store
  3. in cool place.
