Honey Glazed Carrots
  • 6 medium carrots, cut in 2" to 3" pieces
  • 3 tbsp. butter
  • 1 tbsp. brown sugar
  • 2 tbsp. honey
  1. Cook carrots in small amount of boiling salted water 10 to 15 minutes; drain.
  2. Cook less time if you prefer to slice.
  3. In skillet, melt butter; add sugar and honey; simmer 1 to 2 minutes.
  4. Add carrots and cook over low heat about 5 minutes; turning carrots to glaze.

Older or mature carrots don't seem as sweet to me as baby carrots. This recipe sweetens carrots chunks or slices nicely.
