Horseradish Bean Dip
INGREDIENTS
- 2 cups cooked cannellini beans
- 2 tablespoons olive oil
- 1 tablespoon prepared horseradish
- 1/2 cup sour cream
- 2 scallions, trimmed and minced
- Coarse sea salt to taste
- Fresh ground pepper to taste
DIRECTIONS
- Combine beans, olive oil, horseradish, sour cream, and scallions in a blender or food processor.
- Blend until smooth. Season with salt and pepper to taste.
