Horseradish Bean Dip
  • 2 cups cooked cannellini beans
  • 2 tablespoons olive oil
  • 1 tablespoon prepared horseradish
  • 1/2 cup sour cream
  • 2 scallions, trimmed and minced
  • Coarse sea salt to taste
  • Fresh ground pepper to taste
  1. Combine beans, olive oil, horseradish, sour cream, and scallions in a blender or food processor.
  2. Blend until smooth. Season with salt and pepper to taste.
